Randy and Patti (Hoyle) Eckstein took over management of the House of Plenty in August 2007. While the restaurant is under new management, the Ecksteins are carrying on the traditions and lunch menu that Ken and Judy Ernst have developed over the past twenty years.

Randy has been a metro east resident for 25 years and has been active throughout the community with involvement at St. Paul Catholic Church and School, the Pregnancy Care Center's annual banquet, and coaching HYBSL during his sons' participation. Patti (Hoyle) grew up in St. Jacob and along with their children; Ryan, Keaton, and London is actively involved in all facets of the restaurant.

Chef Randy Eckstein is a food service professional with over 35 years experience. A wide range of experience includes formal dining and banquet work with the Marriott Pavilion Hotel in St. Louis, private club and catering experience with the Media Club as well as experience with a number of chain and independent restaurants. Chef Randy also has executive dining room experience with organic food preparation for over ten years. Add to this a degree in biology along with graduate work including nutrition and Chef Randy has a great understanding of food.

Initial thoughts of starting a dinner club led to the introduction of Chef's Table which offers fine dining on Friday and Saturday evenings from 5:30 p.m. to 9:00 p.m. Guests can choose from a prix fixe or a la carte menu.
